Amina has been cooking Afghan food her whole life. Now she's cooking it for Hastings.

Amina's Kitchen

Nad's Afghan Kebab House opened on High Street, Hastings, with a simple premise: cook the way Amina has always cooked - from scratch, with care, using the recipes she grew up with. Every day she makes the bolani filling by hand, slow-cooks the lamb karahi, and bakes the flatbread fresh.

Afghan food is not complicated, but it takes time and honesty. The biryani needs proper layering. The karahi needs bone-in meat and patience. Amina doesn't shortcut those things. When guests ask her about the dishes, she tells them how she makes them. That is the whole point.
